Fruit Salsa with Cinnamon Chips

This is seriously SO delicious. It’s a wonderful snack to have on a warm day… really, any day for that matter. It is so refreshing! I have taken this as my food of choice for play dates and it has been a HUGE hit! Yum!

What You Need: (This recipe is for 1 serving)

6 inch whole wheat tortilla
1/2 small red delcious apple
1/2 purple container of frozen strawberries (partially thawed)
1 tsp coconut oil
2 tsp raw sugar
Cinnamon

Directions

  1.  Preheat oven to 350 degrees.
  2. Put your teaspoon of coconut oil in a small dish and melt it in the microwave (should only take a few seconds).
  3. In a small dish, place one of your teaspoons of raw sugar and sprinkle some cinnamon in until you get a nice even mixture of cinnamon to sugar. Place bowl to the side.
  4. Take the tortilla and place it on a cutting board. Brush some of the coconut oil on the tortilla until it has a slight coating on it. Then, sprinkle the cinnamon/sugar mixture over the tortilla.
  5. Cut the tortilla into small triangles (chips), and then transfer the chips over to a non-stick baking sheet.
  6. Place in the oven for 6 to 8 minutes.
  7. While the chips are baking, dice your apple into small pieces. Take your partially thawed strawberries and diced apples and blend them. Put the diced apples and blended strawberries into a small bowl. Sprinkle over your last teaspoon of sugar and mix. Put the bowl to the side
  8. Once the chips are done, let them cool and then enjoy!

Tortilla – 1 yellow
Fruit – 1 purple
Coconut oil – 1 tsp
Sugar – 2 tsp (coffee section)
Tip:
This salsa refrigerates well. Make multiple servings for a gathering or for a snack throughout the week.

Apples and Cottage Cheese

Ok, I love cottage cheese, but when I made changes to my diet, the combos I used with cottage cheese had to go. When I heard of this concoction, I couldn’t see it working, but I wanted to try it either way. WHAT?! It is absolutely delicious! I really work my day around having this is a mid-morning snack. It is to die for!

What You Need:

1 Red Delicious Apple
3/4 c (1 red container) Cottage Cheese
Cinnamon to taste
Drizzle of agave nectar

Directions:

  1. Place cottage cheese in the bowl.
  2. Dice the apple and place over cottage cheese.
  3. Sprinkle with cinnamon and mix.
  4. Drizzle agave nectar and enjoy!

This is SO easy, SO refreshing, and SO delicious. You know, food doesn’t have to take a lot of time to make to be delicious. We are busy, and we need to find things that work for our schedules. This is EASY!

What You Need:

Fruit of choice: I chose strawberries, apples, and blueberries

Directions:

  1. 1 purple container (if you are doing the 21-Day Fix) is for your apple. Dice the apple and place in a bowl.
  2. Fill another purple container with blueberries and diced strawberries. Place in the bowl.
  3. Mix together and enjoy! It’s that simple.

Fruit – 2 purple

 

Apples and Peanut Butter

Apples and Peanut Butter

This is truly a simple, tasty snack that anyone will love, even your KIDS! It takes no time to prepare, but it is definitely satisfying.

What You Need:

One red delicious apple
1 tsp. All-Natural Peanut Butter
Cinnamon (to taste)

Directions:

  1. Slice apple into small slivers.
  2. Measure out 1 tsp of peanut butter into a small container.
  3. Add cinnamon to the peanut butter to taste. Mix well.
  4. Enjoy!

Apple – 1 purple
Peanut Butter – 1 tsp
Cinnamon – free

 

Veggies and Hummus

Veggies and Hummus

Let’s just make life EASY. Eating healthy does not have to be difficult. Sometimes you just need simple on-the-go snacks that you can pack for yourself or for the kids on those busy days! This is the perfect snack to take anywhere!

What You Need:

1 cup baby carrots or carrot chips
1/3 cup original hummus (store-bought or homemade)

Directions:

  1. There is nothing to be done! Either serve on a plate or place in a baggie/tupperware to go. Enjoy!

Carrots – 1 green
Hummus – 1 blue

Tip:

You can really use any vegetable that you like. I am really picky with raw vegetables, but really, anything goes if you enjoy them!
