Flourless Brownies

I have a major sweet tooth. My husband and I would eat sweets EVERY night after we put the kids to bed. It was almost like a reward for getting through the day. The only problem was that those treats always consisted of ice cream, brownies, cookies, cheesecake, and every other unhealthy option you can think of.

When we started the 21-Day Fix program, the sweet tooth didn’t necessarily go away. However, we changed the TYPES of sweets we ate, and what a difference it has made. This one right here is one of my FAVORITES!

What You Need:

1 (15 oz.) can chickpeas (garbanzo beans), drained, rinsed
3 large eggs
1/2 cup pure maple syrup
1/3 cup unsweetened cocoa powder
1 tsp. baking soda
3 Tbsp. coconut oil, melted
1 tsp. pure vanilla extract
1/3 cup dark chocolate chips

Directions:

  1. Preheat oven to 350° F.
  2. Prepare 12 muffin cups by lining with muffin papers or coating with nonstick cooking spray; set aside.
  3. Place chickpeas, eggs, maple syrup, cocoa powder, baking soda, coconut oil, and extract in blender or food processor; cover. Blend until smooth.
  4. Divide batter among 12 prepared muffin cups.
  5. Top each muffin with about four chocolate chips; push into batter.
  6. Bake for 10 to 12 minutes, or until toothpick inserted in center comes out clean.
  7. Cool completely and enjoy!

Tip:

Take these with you to a play date, a gathering, or some other social event. People will LOVE them, and they won’t even know they’re healthy!

 

Cannoli Dip

Ok, so here’s the scoop. I NEVER had a cannoli in my life until my husband and I traveled to New Jersey and made a stop in Hoboken at the all famous Carlo’s Bakery. I can still taste the cannoli that I had that day. It was seriously the most delicious thing I have ever tasted. I have had to stop watching Cake Boss because it reminds me of that darn cannoli that I want to eat again so badly. I even went as far as checking to see if they would deliver… You see the point. I love a good cannoli.

Well, one day in one of my challenge groups, a wonderful challenger and coach of mine shared this recipe. I decided to make it, but I didn’t have all of the ingredients. I guess I was desperate enough to try, and let me tell you, I failed. It was disgusting, but remember, I didn’t have all of the ingredients. Therefore, I attempted it again with everything at hand, and OH MY GOODNESS!!! Are you kidding me?! This dessert is absolutely delicious, and wait a minute, it counts as a protein?!?! Yes!

I am in love with this dessert, and it takes good care of that sweet tooth of mine!

Give it a try…. but please use all of the ingredients!

 

What You Need:

1 red of part-skim/low fat ricotta cheese
1 tablespoon plain, fat-free Greek yogurt
2 teaspoons raw honey
2 teaspoons vanilla extract
2 packets of stevia
1 teaspoon mini chocolate chips (optional, but totally recommended)

Directions:

  1. Mix all ingredients together except chocolate chips.
  2. Refrigerate 1 hour. Add chocolate chips.
  3. Devour!!!

Ricotta Cheese – 1 red
Chocolate Chips – 1 yellow (treat swap)

Tip:

Add strawberries if you are needing some fruit for the day. You could even add some cocoa powder and make it a chocolate cannoli dip! Play around with it to find your favorite combo!

 

Banana Ice Cream

I love ice cream. I know… I know… If you’ve seen my other recipes, you have probably seen that I mention the word LOVE a lot, especially when it comes to desserts. It’s true. We love ice cream in this house. We would look in the ads before we started taking care of our health and we looked for the BOGO deals on ice cream. You could never have too much, right? WRONG…

Well, a friend of mine and one of my challengers (Have I told you how much I love my challenge groups?) shared a recipe for Banana Ice Cream. I just had to try it! Sounded simple enough. Now, I must admit, I am not a Greek yogurt fan at all, but I have found different recipes where I do enjoy it and the taste is masked. This is one of those!

What You Need:

1 frozen banana
1/2 cup Greek Yogurt
2 tsps peanut butter
2 stevia packets

Directions:

  1. Place all ingredients in a blender (make sure to blend until the texture is smooth).
  2. Place in freezer until the consistency becomes more of that of ice cream (about 10 minutes).
  3. Stir and enjoy!

Banana – 2 purple
Greek Yogurt – 1 red
Peanut Butter – 2 tsp

Tip:

Use those bananas that are almost ready to be thrown away. They are the sweetest!

 

 Chocolate Mug Cake

Are you kidding me? This is SOOOOOOO good… no other explanation needed.

What You Need:

1/4 tsp baking powder
2 packets of Stevia
1 scoop Chocolate Shakeology
dash of salt
1 egg
1 tsp cocoa powder
3 tbsp unsweetened vanilla almond milk

Directions:

  1. In a mug mix Shakeology, baking powder, salt, cocoa, and sweetener.
  2. Next, mix in egg and 3 tablespoons of almond milk.
  3. Mix until dry ingredients are wet.
  4. Microwave for 90 seconds.
  5. When it is done, the edges will pull from the sides.
  6. Enjoy!

21-Day Fix Container Count:

Shakeology/Egg – 1 1/2 red

Tip:

You could add peanut butter if you are a peanut butter lover! If you’d like to add peanut butter, put one dollop in the center and push it down a bit (will count for 1 tsp in your container count).

Peanut Butter Bars

When I bought my Fixate Cookbook, this was the FIRST thing I had to make. I love peanut butter, and well, I love sweets, so this seemed like an amazing combination. Oh it is pretty amazing! When you need a little something to satisfy your sweet tooth, give these a try!

What You Need:

1 1/2 cups all-natural smooth peanut butter
1/2 cup raw honey
2 tsp pure vanilla extract
2 large eggs
1/2 tsp baking soda

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray an 8×8 in. baking pan with cooking spray.
  3. Combine peanut butter, honey, extract, eggs, and baking soda in a large bowl; mix well.
  4. Evenly spread batter into pan. Smooth top with a spatula.
  5. Bake for 20-23 minutes. Squares may be a little soft, but they will continue to cook while cooling.
  6. Cool. Cut into squares.

2 1/2 teaspoons

Tip:

Use these for play dates, get-togethers, etc. They will be a hit!
