This is the FIRST meal I made when I started my journey to eating healthy… the VERY FIRST dinner. And man oh man is it amazing! This meal is still going strong in our house. Not only is it super tasty, but it is so easy to make!

Crock Pot Balsamic Pork Roast

Tip:

This recipe makes a lot of leftovers. You can either make it for a gathering, or you can get creative with your leftovers so that you don’t get tired of the same meal for mulitple days. Pork tacos… Pork sandwich… This can be altered in so many ways!

For pork sandwiches, it’s VERY simple:

Balsamic Pork Sandwiches

Pork Sandwiches

What You Need:

Leftover pork
Shredded mozzarella cheese
Whole wheat buns

Directions:

  1. Heat up pork for about 1 minute in the microwave with a moist towel over top.
  2. Place 3/4 cup of pork on each sandwich.
  3. Sprinkle with cheese on top.
  4. If you want cheese to melt, place sandwich in the microwave for about 10-15 seconds.
  5. Enjoy with your favorite vegetable side or just on its own.

Mozzarella cheese – 1/2 blue
